Kabobs in Middle Eastern Marinade

Ingredients

4 tsp Garlic, crushed

1 ea Onion, small, chopped

1 Tbs Paprika

1 tsp Cinnamon

1 tsp Turmeric

1/2 tsp Cardamom

1 tsp Pepper, black

2 tsp Oregano

1 tsp Curry powder

1/4 cup Lemon juice

1 cup Plain yogurt

15 ea Boneless, skinless chicken thighs or equiv chuck roast

15 ea Bamboo skewers

3 ea Bell peppers

8 ea White mushrooms

3 Tbs Olive oil

2 tsp Salt, pepper to taste

Directions

Puree the garlic, onion, spices, lemon juice and yogurt in the container of a blender or food processor.

Cut the chicken or beef into skewer-size pieces and place in a non-aluminum container; cover with the marinade. Turn well to coat evenly. Cover and refrigerate for 4-24 hours.

If using beef, you may smoke the marinaded meat for one hour before threading onto the skewers.

Cut the vegetables into skewer-size pieces. Thread the meat and vegetables alternately onto the skewers. Brush on olive oil and sprinkle with salt and pepper.

Place on grill or under broiler and cook about 2-3 minutes per side or until done.
